Golden PeasUpdated 9 months ago

“Golden pea” is another name for yellow pea. It is not a chick pea (aka garbanzo bean).

A yellow pea is a type of field pea (Pisum sativum) that is typically harvested when mature and then dried for long-term storage. Yellow peas have a pale yellow color and are often used in soups, stews, or as a protein source in various dishes. They are also processed to make pea flour, which is used in a variety of gluten-free products.

The difference between a garden pea and a field pea primarily lies in their usage and taste:

Garden Pea (Pisum sativum var. sativum):

These peas are harvested while they are still immature and green. They are sweet and tender and are typically eaten fresh, frozen, or canned. The pods of garden peas are usually discarded, as they tend to be tough, and only the inner peas are eaten.

Field Pea (Pisum sativum var. arvense):

These peas are harvested when they are fully mature and then dried. They are usually not as sweet as garden peas and have a more earthy taste. Field peas can be split, which involves removing the skin and splitting the pea in half along its natural seam. Yellow peas and green peas (used for split peas) are both types of field peas.

The primary difference between garden and field peas is the stage of maturity at which they are harvested and their culinary uses. Garden peas are harvested young and are sweet and tender, while field peas are harvested mature, dried, and have a more earthy flavor.
